This is Elizabeth’s Gimme Recipes! Contest entry. A great way to eat those garden zucchini!
Balsamic Grilled Feta Zucchini
Preheat oven to 400.
Slice 4 zuchinnis lengthwise and seed. Place on cooking sheet and drizzle with 1/2 cup balsamic viniagrette.
Crumble 1/2 cup feta cheese (kind of a splurge but I buy in bulk at Costco – still cheaper than meat!)
Top zuchinni with Feta and cook for 20 minutes or until tender and feta starts to crisp. Serves 4.
