Want good food, and fast?  Speed Vegan by Alan Roettinger provides healthy recipes with minimal ingredients and effort, to give your family tasty, gourmet-like meals without hours of prep time.

This was a fun cookbook to test, and I was able to try recipes on my busier days when we needed sustenance without all the working and waiting.  Asparagus with Cannellini was the first to our table, and I mistakenly thought this one couldn’t possibly be filling enough on its own.  So I added some Basmati rice, which was indeed a nice addition, but we agreed that without the rice it still would have been enough for two hungry adults and one asparagus munching toddler.

Other favorites were such as the Strozzapati with Mushrooms (pg. 118) and Dandelion and Red Onion Salad with Basil Vinaigrette.  Yes, there I go with the dandelions again!  Perhaps you can see why I enjoy the book so much.  I’m sure you will too, so I’m very happy that we’re giving away one copy of Speed Vegan to one of you!

Very likely the mother of all vegan cookbooks, the Veganomicon: The Ultimate Vegan Cookbookby Isa Chandra Moskowitz and Terry Hope Romero is a vegetarian chef’s idea of perfect reading material.  The book’s nearly 300 pages are filled with hundreds of recipes, cooking advice, ingredient info, and heaps of humor making it a joy to read, as well as to cook with.

I tested several of this book’s recipes on my own family, and we really enjoyed the challenge.  Over the years, we’ve become true fans of tempeh (properly prepared, it’s a “meaty” addition to vegetarian fare), and Veganomicon loaded us up with options.  The tempeh recipes were a big hit, and while I prepared ours in my beloved iron skillet, we’re really looking forward to throwing these on our grill.  We also tried the Pasta E Fagioli (pg. 194), an uncomplicated and filling meal which reminded us why we enjoy the combination of pasta and beans, so surprising to most American taste buds.  But while this recipe was rather simple, much of the Veganomicon is for the true vegan foodie who enjoys taking some time in the kitchen.  As it turns out, I love to cook meals that require more effort; call it cooking therapy.

All the recipes in Veganomicon that we tried were things I’d probably make again.  I enjoy perusing through this book, reading recipes, and selecting a menu for our family.  And the family enjoys the eating adventure!  Definitely a must-have for the vegan who really loves their food.

Sure you  learned to like tofu and rice milk.  You eat vegetarian more than you ever thought possible when you were younger and scarfing down burgers.  You exercise, buy organic bananas, search ingredient labels for corn syrup.  The healthy lifestyle that started out as a challenge is now, for the most part, a pleasure.  (Yoga instructors can be cute, right?)  So when it’s time to unwind with friends and have an evening with a few adult beverages, do you need to toss your health consciousness to the organic winds?  Certainly not!  Going green doesn’t get much more enjoyable than Organic, Shaken and Stirred: Hip Highballs, Modern Martinis, and Other Totally Green Cocktails by Paul Abercrombie.

For some eco friendly bar tending, Organic Shaken and Stirred offers up a bevy of mixed drink concoctions.  Give your margarita an eco twist with organic fruit purees and juices, even organic tequila (yes, it’s available!) for a Saffron Margarita.  Or how about a summery Watermelon Aguafresca (page 66) featuring organic watermelon juice, organic rum, even organic basil?  I’d love to serve the Purple Basil Gimlet (page 107) or some Spiked Blueberry-Thyme Lemonade.  Heck, with beverages like this every organic Tom, Dick and Sally is going to be lined up at your door come a Friday night, highball glass in hand!

So raise a glass and give a toast to life organic style!  Three cheers for Green Mojitos!
