Cheesy Cauliflower ‘n Corn Mash Recipe

Jenn sends us this recipe for the Gimme Recipes! Contest.  Sounds like a quick side dish, and that cauliflower is a great disease-fighting food!  Good ole cruciferous veggies…
Cheesy Cauliflower ‘n Corn Mash
water, for boiling
1 head cauliflower, cut in florets
1 cup frozen corn, thawed
1/4 cup milk
1/4 cup grated parmesan cheese
1/2 tsp. salt
fresh cracked pepper, to taste
    In a large pot bring enough water to cover cauliflower to a boil and let cook until tender, about 8 to 10 minutes.  Drain and place into a medium mixing bowl, also adding corn, milk, parmesan and salt.  Using an electric mixer on low or a potato masher, blend mixture until smooth, or desired consistancy. 
Prep: 5 minutes
Cook: 15 minutes
Serves: 4-6
