Cheesy Polenta Recipe

Here’s Astacia’s recipe for the Gimme Recipes! Contest.  I love polenta.  If you’re vegan, you can try soymilk and vegan cheese.  (I have no idea how vegan cheese is, but I know it’s out there!  One of these days I’ll have to give it a whirl.  I’m a sucker for cheese.)

Cheesy Polenta

3 cups water
1 cup milk
1 ½ cups polenta
1 teaspoon sea salt
½ cup parmesan, romano or asiago
2 cloves garlic, minced
handful of finely chopped oregano, thyme, parsley

Bring water to a boil. Add milk, salt and polenta meal. Turn heat down to medium. Remove from heat as polenta thickens. Add cheese and seasonings, stir well.

Serve warm or form in a greased loaf pan and cool.
