Easy Black Bean Soup

Ingredients

1 teaspoon extra virgin olive oil
1/2 small onion, chopped
1/2 cupped chopped carrots
1/2 cup chopped celery
1 clove garlic, minced
1/8 teaspoon pepper
2 cups fresh baby spinach
1 (14 ounce) can crushed tomatoes
1/3 cup chickpeas, rinsed and drained
1/3 cup black beans, rinsed and drained

Cook onions, carrots, celery, garlic, and pepper in olive oil for 5-7 minutes. Add broth, spinach, tomatoes, chickpeas, and black beans; bring to boiling. Cover, reduce heat, and simmer 10 minutes.
