Frittata Recipe

4-5 cups of veggies (if you use shredded zucchini or smaller cut items they don’t have to be cooked; harder veggies (potatoes, cauliflower, etc. should be cooked) … variety is great
1/4 fresh minced parsley
1-2 green onions, chopped (or any onion)
4-6 eggs well beaten (if I use 6 eggs I take away two yokes - we don’t need that much yoke!)
1/2 cup of your favourite cheese
1 small can of diced green chillies (Mexican food isle)
salt, pepper,garlic to tastePour mixture into buttered casserole and bake uncovered at 350 for 25 minutes or until set.
