Fruit Slaw Recipe

Thanks to Barbara for another great entry into the Gimme Recipes! Contest.  

Fruit Slaw

Serves 8

Slaw:
1      (8-1/4 ounce) can pineapple chunks in pineapple juice, drained
1      medium banana, sliced
1      small navel orange, peeled and chopped
1/4   cup golden raisins
1/4   cup dry sweetened cranberries
3      cups finely shredded green cabbage
Dressing:
1/2   cup plain yogurt, well drained
1/4   cup orange juice
2      tablespoons honey
1      tablespoon finely grated orange rind

In a large mixing bowl, toss all slaw ingredients.  In a small mixing bowl, blend all dressing ingredients.  Pour dressing over slaw.  Toss lightly.  Cover and refrigerate until cool.  Toss lightly again at time of service.  

This is a super-easy salad that is pretty, tasty and healthy!
