Here’s a recipe for the Gimme Recipes! Contest from Carrie of Missouri. She says the original had chicken too, if you feel like adding that in as well. Sounds like a fun dinner to me!
This is a gumbo recipe that I got when I was in the Bahamas.
It takes about ten minutes to prepare it. I let my kids cut up the
softer veggies so they feel like they’re helping.
(1) onion chopped
(1) medium zucchini diced
(1) large sweet potato nuked (to soften it) and diced
(1) green bell pepper diced
(1) can of diced tomatoes with chiles
(1) can of black-eyed peas… fergalicious
(1) package itty bitty shrimp
Throw all of it in a pot with enough water to cover the ingredients
plus an inch. Add salt, pepper and paprika. If your kiddos like
spicier food, you could add red chile pepper. Bring it to a boil then
add a half a cup of instant rice. All total it should take about 35
