Ingredients for 1 small bread (about 350 g)
For the onion bread
- 175 g wholemeal spelled flour
- Peel ½ onion and cut into thin cubes
- 1 tbsp organic margarine + a little to grease the baking pan
Liquid ingredients and spices
- 75 ml of lukewarm water
- 75 ml of soy drink
- 7 g dry yeast
- 1 ½ tablespoons * coconut blossom sugar or xylitol (healthy sugar substitute)
- 1 tsp caraway (whole)
- 1 teaspoon crystal salt
- 1 tablespoon chopped thyme
* The yeast reacts better to the coconut blossom sugar.
Preparation time approx. 20 minutes, cooking time approx. 45 minutes
Roast the cumin in a hot pan until it starts to smell aromatic and then set it aside.
Carefully heat the soy drink in a small saucepan until small bubbles appear. Then stir in coconut blossom sugar or xylitol, salt and margarine and let cool to lukewarm temperature.
In a large bowl, dissolve the yeast in lukewarm water and leave to stand for 10 minutes.
Then add the cooled soy drink mixture, the flour, the onion, cumin and thyme and stir well with a wooden spoon. If the dough is supple, cover the bowl with a cloth and let the dough rise in a warm place for 45 minutes.
Then preheat the oven to 180 ° C circulating air and place a refractory bowl with water on the bottom of the oven.
Then work the dough until it drops and knead for a few minutes. This works best with floured hands, as the dough is very moist and sticky. Then place in a greased little bread dish and let rest in a warm place for about 15 minutes. Then bake in preheated oven for 35 to 40 minutes.
Tip: If you knock on the bottom of the onion bread and it sounds hollow, the bread is ready baked.
