No matter how busy we get, we all want to give our families healthy meals.  But for most of us, I think the idea of a truly healthy, made-from-scratch meal conjures up images of our grandmother holed up in the kitchen for hours preparing a feast.  While that sort of cooking can certainly be fun and rewarding on occasion, for the busy lifestyles most of us have, even the most enthusiastic family chef isn’t able to spare the time for such a meal.  If you’re looking for some truly healthy vegetarian meals that are homemade, easy, and delicious, Simply Vegan: Quick Vegetarian Mealsby Debra Wasserman will become an indispensable part of your meal planning.

Simply Vegan offers over 100 pages of very easy vegan recipes followed by another 100 pages of nutritional info of importance to vegan and vegetarian families.  Readers will be able to easily reference vegetarian sources of protein, calcium, and iron intake information, learning more about raising vegan families, and more.  

But of course the stars of this book are the recipes.  If you’re new to the idea of vegetarianism, you may have a preconceived notion of what types of foods you’d have to eat.  Maybe you think it’s only about tofu and seaweed, but you’d be surprised to flip through this or any cookbook published by the Vegetarian Resource Group to find the recipes look much more familiar than you expect.  I’ve made several of the recipes within Simply Vegan, and we haven’t had one flop yet.  In fact, we have had a few of the curry recipes, a wonderful pita chip snack that became an immediate favorite, and even a more adventurous tempeh recipe.  (Adventurous but simple, mind you!)
