I’m a longtime cookbook buff, and the more I learn about nutrition, the more my cookbook tastes change.  I used to go straight for the home cooking sorts – lots of gravy, breading, roasted meats.  But as I learned more about nutrition, my reasons for eating in the first place even changed.  I was now looking to give health and energy to my family, as well as delicious meals.  This means that when I get a book like the Vegan Handbook, I jump right in and start cooking.

Vegan Handbook, published by the Vegetarian Resource Group, has over 200 recipes – stuff good enough to entice even your meat eatiest relatives.  Many vegetarian cookbooks are either very complicated, too weird and scary for beginners, or filled with canned, boxed, and processed ingredients.  (After all, even Fritos are vegetarian.  But are they healthy?)  The Vegan Handbook is filled with healthy, simple, delicious recipes and “non-scary” vegetarian fare, if you will.  What’s more, the recipes have whole food ingredients like fresh fruit and vegetables; no cans or boxes required!

Most importantly, the recipes produce delicous food.  Cooks can choose from a wide variety of styles – everything from Mexican and North African to kid favorites and desserts.  Many of the recipes sound so good just at first glance that my initial reaction was, “Yum!  That can’t be healthy!”  Surprise, surprise – they all are.  So grab the Vegan Handbook and get cooking!  If you haven’t already, you’re about to fall in love with health food.

 When I say the word “vegan” to my husband, he turns green and runs in the opposite direction. He used to react this way to “vegetarian” but now he has adjusted. When I discovered the Vegan Microwave Cookbook, I decided it was best not to mention the title and just serve the meals. Much to my surprise this cookbook offers many recipes that are totally suitable for my picky man. Some of the delicious recipes that work in my household are:

No matter how busy we get, we all want to give our families healthy meals.  But for most of us, I think the idea of a truly healthy, made-from-scratch meal conjures up images of our grandmother holed up in the kitchen for hours preparing a feast.  While that sort of cooking can certainly be fun and rewarding on occasion, for the busy lifestyles most of us have, even the most enthusiastic family chef isn’t able to spare the time for such a meal.  If you’re looking for some truly healthy vegetarian meals that are homemade, easy, and delicious, Simply Vegan: Quick Vegetarian Mealsby Debra Wasserman will become an indispensable part of your meal planning.
