Jane Marie (Thyme for Herbs and An Herbal Bedfellow), contributing blogger to dkMommy Spot, shares her views on the cookbook “Vegan Microwave Cookbook” by Chef Nancy Berkoff, EdD, RD.  Enter to win your own copy here!

When I say the word “vegan” to my husband, he turns green and runs in the opposite direction. He used to react this way to “vegetarian” but now he has adjusted. When I discovered the Vegan Microwave Cookbook, I decided it was best not to mention the title and just serve the meals. Much to my surprise this cookbook offers many recipes that are totally suitable for my picky man. Some of the delicious recipes that work in my household are:

Tri-Colored Stuffed Summer Squash

Spanish-Style Rice

Orange Rice with Celery

Red Pepper Soup

Cucumber and Avocado Soup

Tri-Color Herbed Peppers

Besides offering these tasty recipes,Vegan Microwave Cookbook is all about microwave cooking for fast and healthy meals. The introduction begins, “If You Can Boil Water, You Can Cook with a Microwave.” This sentence alone takes the fear and mystique out of vegan cooking for those of us who are on a new culinary adventure. I’m sure you will thoroughly enjoy browsing through this book and then trying out your new vegan recipes, as I have. And guess what, my man no longer runs for the hills, but eagerly awaits each new “vegan” meal.

The Vegetarian Resource Group is giving away one copy here!

If you’re looking for meatless meals that can be whipped up quick and easy, or if you are a vegetarian who’s in a quandary over which restaurants can handle your need for veggies only, Meatless Meals For Working People: Quick And Easy Vegetarian Recipes is a great book to have onhand.  Filled with simple meal suggestions and recipes, meal guides for particular age groups, and an extensive restaurant guide, the busy vegetarian or vegan will benefit greatly from keeping this book nearby.  With over 90,000 copies in print, you know it’s good!

I’ve been looking to get a wider variety of simple vegetarian meals to our table.  I’m a very busy mom who works from home full time.  So I was happy to check out Meatless Meals For Working People: Quick And Easy Vegetarian Recipes.  Easy to reference with recipes containing few ingredients, Meatless Meals has given me some great ideas for things like soups, salads, and main courses.

I’ve enjoyed the book and plan to take it on trips with us so we can reference the restaurant guide which takes up about the first half of the book.  When we travel, we often feel stuck when it comes to restaurant selection.  We’re not completely vegetarian, but anyone who cuts down on meat, or doesn’t eat it at all, knows how frustrating it can be to find a suitable place to eat without having to count on salads only, “Hold the bacon bits, please.”  This guide covers everything from fast food to fine dining, and it’s going to be a must-have during our travels I can tell you!

Want to win your own?  The good people at Vegetarian Resource Group would like to give one of you a copy!

Perhaps you’re a vegetarian or working to cut down on meat.  Tell me your thoughts! (You may enter once a day – following entries don’t require you to answer the question.) Remember, leave an interesting comment.  If I cannot contact the winner, you might be chosen instead based on your comment.
