When I say the word “vegan” to my husband, he turns green and runs in the opposite direction. He used to react this way to “vegetarian” but now he has adjusted. When I discovered the Vegan Microwave Cookbook, I decided it was best not to mention the title and just serve the meals. Much to my surprise this cookbook offers many recipes that are totally suitable for my picky man. Some of the delicious recipes that work in my household are:
Tri-Colored Stuffed Summer Squash
Spanish-Style Rice
Orange Rice with Celery
Red Pepper Soup
Cucumber and Avocado Soup
Tri-Color Herbed Peppers
Besides offering these tasty recipes,Vegan Microwave Cookbook is all about microwave cooking for fast and healthy meals. The introduction begins, “If You Can Boil Water, You Can Cook with a Microwave.” This sentence alone takes the fear and mystique out of vegan cooking for those of us who are on a new culinary adventure. I’m sure you will thoroughly enjoy browsing through this book and then trying out your new vegan recipes, as I have. And guess what, my man no longer runs for the hills, but eagerly awaits each new “vegan” meal.

I like that you can use the microwave to make the recipes!! I’m a major microwave cooker.
I like this idea because generally vegetarian means either raw or cooking something like beans for a long time-this looks like it has ideas to add variety without adding time to food prep.

This book would be wonderful for my niece who is headed off to college and is a vegan.

I’m not vegan but a couple we know are. We usually go out to eat and I might just surprise them. However I’d need to find out if the pots and preparation items can ever have handled meat. They’re very strict.
I would love to give to my friend who eats too much meat.
