Jane Marie (Thyme for Herbs and An Herbal Bedfellow), contributing blogger to dkMommy Spot, shares her views on the cookbook “Vegan Microwave Cookbook” by Chef Nancy Berkoff, EdD, RD. Enter to win your own copy here!
When I say the word “vegan” to my husband, he turns green and runs in the opposite direction. He used to react this way to “vegetarian” but now he has adjusted. When I discovered the Vegan Microwave Cookbook, I decided it was best not to mention the title and just serve the meals. Much to my surprise this cookbook offers many recipes that are totally suitable for my picky man. Some of the delicious recipes that work in my household are:
Tri-Colored Stuffed Summer Squash
Spanish-Style Rice
Orange Rice with Celery
Red Pepper Soup
Cucumber and Avocado Soup
Tri-Color Herbed Peppers
Besides offering these tasty recipes,Vegan Microwave Cookbook is all about microwave cooking for fast and healthy meals. The introduction begins, “If You Can Boil Water, You Can Cook with a Microwave.” This sentence alone takes the fear and mystique out of vegan cooking for those of us who are on a new culinary adventure. I’m sure you will thoroughly enjoy browsing through this book and then trying out your new vegan recipes, as I have. And guess what, my man no longer runs for the hills, but eagerly awaits each new “vegan” meal.

I’m not familiar with the cookbook however I have seen a lot of vegan recipes and food on food blogs that are intriguing and this would be an interesting read. Plus we use the microwave often so that’s a bonus. Thanks

I really like that there are ways to make vegetables more appealing for the kids. Any ways to get the kids eating their vegetables are a big plus.
my 2nd entry………….love the idea of cooking vegetarian meals quickly
While I am not a vegan, or even vegetarian for that matter, I do believe that eating vegan/vegetarian meals several times a week is part of a healthy diet. I would love a collection of easy to prepare vegan recipes to make preparing these meals easier.

Any way to make healthy meals faster is appealing! Especially since a lot of good vegan food can be time consuming.

always looking for quick, healthy options for dinner
One of my daughters is a vegan and she works long hours. As a mom, I worry about her getting all the vitamins and minerals, yada yada, that she needs. I’d love to gift her this book and know she’s making something other than noodles and sauted kale everyday!
