Jane Marie (Thyme for Herbs and An Herbal Bedfellow), contributing blogger to dkMommy Spot, shares her views on the cookbook “Vegan Microwave Cookbook” by Chef Nancy Berkoff, EdD, RD. Enter to win your own copy here!
When I say the word “vegan” to my husband, he turns green and runs in the opposite direction. He used to react this way to “vegetarian” but now he has adjusted. When I discovered the Vegan Microwave Cookbook, I decided it was best not to mention the title and just serve the meals. Much to my surprise this cookbook offers many recipes that are totally suitable for my picky man. Some of the delicious recipes that work in my household are:
Tri-Colored Stuffed Summer Squash
Spanish-Style Rice
Orange Rice with Celery
Red Pepper Soup
Cucumber and Avocado Soup
Tri-Color Herbed Peppers
Besides offering these tasty recipes,Vegan Microwave Cookbook is all about microwave cooking for fast and healthy meals. The introduction begins, “If You Can Boil Water, You Can Cook with a Microwave.” This sentence alone takes the fear and mystique out of vegan cooking for those of us who are on a new culinary adventure. I’m sure you will thoroughly enjoy browsing through this book and then trying out your new vegan recipes, as I have. And guess what, my man no longer runs for the hills, but eagerly awaits each new “vegan” meal.

Using the microwave is much more energy efficient than using the oven
My 3rd entry-lovethe idea of vegan fast food!
I am a strict vegetarian and enjoy cooking vegan meals as well. But sometimes I don’t have alot of time (or energy) to make a hot meal so I want to use the microwave, but I don’t want to make the meal mushy. So having recipes that are specific for the microwave would be very helpful. And it is hard to find recipe books for vegans and vegetarians!
Thanks for the giveaway!

Giveaway for a Vegan Microwave Cookbook at dkMommyspot: http://tinyurl.com/bkk6pa
I stepped on the scale two weeks ago and found out that I had gained at least 25 pounds since the last time I stepped on one (then, I was 20 pounds overweight). I am a BIG meat eater, but I need to eat healthier. Having some good vegetarian recipes (especially quick microwave meals) handy as an alternative meal would help me a lot in my weight loss plan. (I have already lost 8 pounds in the two weeks since I was scared by the numbers on the scale!)
I like that it is a vegetarian book because I am vegetarian. I am always open to new recipes.
I am subscribed by email.
I have heard so many good things about this book!! I heard it’s easy to follow, with quick recipes that have impeccable taste! Would love to win this, I’m vegetarian as it is, but have a hard time going all vegan for the main reason of just not knowing how to cook good vegan food and make it interesting!
Actually, I like that the recipes are made for the microwave. Since this especially useful for me since I live alone and have problems standing in one place too long….often a problem when doing traditional recipes. I’d love to try this cookbook!!
Thanks so much!!
