Zucchini Cakes Recipe

Here is Susan Davidson’s recipe submitted for the Gimme Recipes! Contest running through July 31, 2008:

Zucchini Cakes
1 cup bread crumbs
1 grated zucchini
1 egg
Italian seasoning to taste
1/2 cup mushrooms (optional)
1/4 cup chopped spinach cooked and drained
Mix ingredients, make into small hamburger patties. Place in skilled with 1 tbsp olive oil.
Yum!

    Soon there will be an abundance of zucchini and I KNOW that I will get sick of succhini bread fast. Thanks for a savory zucchini recipe.
